Prepare the Corn
Shuck fresh ears of corn. Wrap each ear in wax paper and microwave on high 2 minutes per ear.

Grill the Corn
Remove corn from microwave, remove wax paper. Place corn on hot grill and char turning corn. Once desired color, is met, remove from grill and set aside. -
Combine Ingredients
In bowl combine mayonnaise, sour cream, cojita cheese, and the juice of the lime. -
Add Corn to mixture
Roll ear in wet mixture, or remove corn from ear and add to wet mixture -
Final Touches
Finish with dashes of Tajin, FreshJax spices and the zest of lime.
