Oven Chicken with chickpeas

Description

Juicy oven chicken with chickpeas, tomatoes, and bell peppers. Served with tortillas, pasta or really any side of your choice.

Ingridients
  • 4 Chicken breasts
  • 2 Big red bell peppers
  • 300 g Cherry tomatoes
  • 1 Red onion
  • 400 g Canned chickpeas
  • 1/2 cup Orange juice
  • 2 tbsp Honey
  • Corn tortillas or preferred side
Instructions
    Prepare the ingrdients
  1. Take chicken out of the fridge, trim fat, skin or unwanted parts and pat dry with a kitchen towel
  2. Season chicken with your favorite seasoning, I used the Smokey Southwest Grill blend
  3. Cut the bell peppers in bite-sized pieces and cut the cherry tomatoes in half. Dice the onion
  4. Prepare the chicken
  5. Fry chicken in a large pan with a few spoons of olive oil until browned (for around 2-3 minutes per side)
  6. Add onions to chicken and let them brown fry for 1-2 minutes
  7. Pour 1-2 tablespoons of honey over the chicken and add orange juice
  8. Remove chicken from pan and set aside
  9. Let sauce simmer for around 1-2 minutes ensuring to scrape all the good taste from the pan :)
  10. Bake vegetables and meat
  11. Add vegetables to a large baking tray and sprinkle with some olive oil and season to taste.
  12. Add chicken on top and pour the sauce over
  13. Bake at 175 C (350 F) for about 30-45 minutes or until chicken hits an internal temperature of 75C (165F).
  14. Serve and enjoy
